You can create a book using any Pages template, or you can use templates specifically designed for creating books. Portrait book templates are based on word-processing documents, and can be exported as reflowable or fixed layout EPUBs. Landscape book templates are based on page layout documents, and can be exported as fixed layout EPUBs.
These features from your Pages document are exported to EPUB with fixed layout only. You can still export documents that include these features with reflowable layout, but these features won't appear in the exported EPUB.
You can export a page layout document as a fixed layout EPUB. You can export a word-processing document as a reflowable or fixed layout EPUB. For best results when exporting as a reflowable EPUB, use a word-processing document with inline images.
Elements in the Navigation Document are created using the HTML5 element. Because each navigation feature is created using the same element structure, you must also include an epub:type attribute to identify the purpose of each nav structure. The Navigation Document is also a content document and therefore can be visible in the pages of the book.
The element using the epub:type="page-list" attribute provides a method to designate pages in an EPUB that correspond to the pages of the physical book. This is especially useful in a classroom setting when the teacher instructs students to turn to a particular page. You can use the optional epub:type="page-list" attribute to define an empty string to that page so that it is not numbered. Similarly, you can define Roman numerals (i, ii, iii), letters (a, b, c), or numbers (1, 2, 3) for page numbers. If you use something other than numbers or a single word, make sure it is meaningful, keep it very short, and check to make sure it doesn't get truncated on the screen.
If your book is a picture book or other Fixed Layout book, you must indicate pre-paginated in the tag in the element within the OPF file. (See Defining Book Layout Metadata for instructions.) The pre-paginated option determines how the sample is cut. Without this option, the sample is cut as if the content is a text-heavy book like a novel. With this option, the sample is cut based on a percentage of the number of pages rather than word count. Apple Books determines the first page of the book (each page of a Fixed Layout Book, whether a single page or a two-page spread, must be a separate XHTML file) and then cuts the sample from a percentage of total page count. The sample will look to the Landmarks block of the .opf to determine the start of the content of the book. For optimal samples, include epub:type="bodymatter" to indicate the beginning of the book's content. Note that a Landmarks nav is required for Fixed Layout books only if you do not provide a custom sample.
To provide an optimal quality sample for books with interactive content, Apple recommends that you supply your own custom sample due to the dynamic, complex nature of an interactive book. However, a custom sample is optional for books with interactive content. To create a custom sample, create a separate .epub file that includes the pages you want in the sample and deliver it within the block with type="preview". See Apple Books Metadata XML File Annotated in Apple Books Book Package Specification for more information.
Defines whether a book is a flowing book or a Fixed Layout book. Supported values are reflowable (standard Flowing book) and pre-paginated (Fixed Layout book). This is equivalent to fixed-layout : truefalse in EPUB 2.
Previously, in a Fixed Layout book with two documents per spread, iBooks maintained a book-like appearance by including the book spine, pages, and page curl. The ibooks:binding property could be used to override the book-like appearance. iBooks no longer supports the book-like appearance for Fixed Layout books. Any text and examples that included the binding property have been removed from this guide.
New features have been added to support how a book displays when a customer opens a fixed layout (picture) book. Fixed Layout Books require that a display option be set to indicate the EPUB has a fixed layout ("fixed-layout"=true). See Text Directions for instructions. I recreated your visual content using Hoefler Text at 16 pt and a leading of exactly 1.4. Pages is incapable of exporting reflowable text ePubs and will lose shape-sourced rules, and leading. The fixed layout ePub option does not support justification (it warns you), does retain the rule, and leading. If you must have justification in your final ePub result, then Pages is the wrong tool.

The earlier version of ePUB could only convert eBooks into one standard layout- the reflowable format. The new ePUB3 version has brought a fixed layout into the picture. Publishers and authors now have to decide which format to choose at the time of conversion, based on the kind of content.
In a fixed layout format, the content on the page remains static. Sometimes, ePUB fixed layout is necessary to keep the content and design at defined places on a particular page. Changing the alignment could either change the flow of reading or change the meaning of the content.
Fixed layout eBooks, on the other hand, have additional interactivities. One can include animations and videos in a fixed layout eBook. The text to speech feature can be added for users to listen to the eBook, this feature also helps people with visual impairment or a reading disability.
Reflowable layout costs less than the fixed layout ePUB because they are usually cheaper to produce. ePUB supports reflowable layout, so one just has to convert the file into a responsive and reflowable ePUB format.
Based on the type of content, the author or the publisher must decide which layout they want the eBook to be published in. The main differentiating factor is that reflowable content changes its placement according to different screen sizes; while the fixed layout content does not.
The fixed layout format is better suited for documents that include a large number of graphics, audio and video content. This format is better suited for children's book, cookbooks, textbooks, and comic books.
The key component of the extension is the addition of the fileMETA-INF/com.apple.ibooks.display-options.xml. This file tells iBooks that the book is the fixed-layout type, and typically looks something like this:
DRP stands for Digital Replica Plus which means the document has both an image and text for each page to provide fixed layout or flowing layout options in their reader. Barnes and Noble uses a crude method of identifying their Fixed layout ePub to their reading application. The file name is modified to include _drp.epub as part of the name of the file. Their reader picks up this file name to provide the extra features.
While technically not an ePub the Amazon KF8 format has similar capability. The KF8 format supports fixed layout by adding data to the OPF file to define the pages and layout parameters. The idea of size is expected to be shown in pixel values.
ePub 3 has support for fixed layout. A fixed layout can be applied to the entire document or to individual spine elements. It can also prescribe the authors intended orientation, portrait or landscape, for the these fixed layout pages. ePub 3 has defined mapping for the above fixed layouts to conform to ePub 3 usage.

You'll need to stick with a portrait book template if you want a Reflowable EPUB. That's because landscape templates don't support this export format. If you're going for a fixed layout, either orientation works.
But in page layout templates such as ours, you start out with a set of master pages with varying content layouts. (There's a blank master page too.) And when you click on the Add Page button to insert a new page, you have to select one of these master pages to duplicate.
